This cake is so full of citrus flavor and is not too sweet! It is also extremely moist because of all the kefir and olive oil in it. In my opinion, this is a nice break from all the desserts out there that don’t seem to have any flavor other than that of…sugar. Anyway, this cake goes pretty quickly around here, so I better go get some!
- 2 cups all-purpose flour
- 1 cup sugar
- 1 cup plain kefir (buttermilk or plain yogurt can be used as a substitute)
- 1/3 cup olive oil
- 2 large eggs
- 1 1/4 tsp. baking powder
- Zest of 2 oranges and juice of 1 orange
- Zest of one lemon and juice of 1/2 lemon
- 1/4 tsp. pure vanilla extract
- Pinch of salt
Preheat oven to 390 degrees Fahrenheit. In a large bowl, combine eggs, kefir, sugar, olive oil, salt, orange and lemon zest, vanilla extract, and juice of 1/2 an orange. Sift in flour and baking powder and mix gently until you get a smooth consistency.
Pour the batter into a baking tin that has been greased with butter or olive oil. Bake for 30-40 minutes, or until the cake looks golden or a cake tester/skewer comes out clean.
While the cake cools, combine the remaining juice from 1/2 an orange and 1/2 lemon. Once the cake cools, poke some holes in the cake with a skewer and pour the juice around the cake. Alternatively, you could mix the juice with a few tsps of powdered sugar to make an icing.
