This is a breeze to put together and is a good waffle to throw into the rotation if you like savory options. The harissa I have has red bell pepper in it so it is not as spicy as other varieties I’ve had. If you have one that’s all/mostly chili pepper, cut the harissa down to 1 tbsp to adjust the heat level.
Ingredients:
- 1 medium sweet potato
- 1 1/4 cup flour
- 1 tsp baking powder
- 1 tsp sugar
- 1/4 tsp salt
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 1/4 tsp black pepper
- 1/4 tsp marjoram (optional)
- 2 tbsp harissa paste
- 1 egg
- 1 cup water (room temp.)
- 1 tbsp oil
Directions:
Preheat waffle iron.
Wash and peel sweet potato. Cut into chunks and add to small pot with enough water to cover the potatoes and 1 tsp salt. Bring to boil and cook until a fork pierces through easily. Drain water, mash and set aside to cool.
Mix together flour, baking powder, sugar, salt, and all dry seasonings. Mix together with a fork.
Add water, oil, harissa paste, and egg and mix together with fork. Then add mashed sweet potato and mix until evenly combined.
If your waffle iron requires, spray with cooking spray or grease with oil/butter. Add about 1 cup of batter and cook according to waffle iron instructions (my Dash iron requires about 5 minutes).
Serve with topping(s) of choice (sour cherries in syrup pictured above, maple syrup works well too)!
