This is one of the easiest bright summer recipes that let’s good cherry tomatoes shine. Toss in some pasta like farfalle and you have yourself a meal.
If you make this with pasta, reserve about 1 ladle of pasta cooking water and add to the tomatoes before mixing in the pasta.
- 24 oz cherry tomatoes
- 4-6 oz Bulgarian or Greek feta cheese (or whatever feta you can find)
- 1/4 tsp red pepper flakes
- 2 cloves crushed garlic
- 2 tbsp chopped fresh parsley
- 3 tbsp olive oil
- few pinches of salt
Heat oil on pan over medium-high heat. Once hot, add red pepper flakes, tomatoes , and a pinch of salt. Cook for about 4 minutes, or until tomatoes begin to blister. Turn heat down to medium-low then add garlic. Cook for another minutes then add parsley and feta. Cook for another minutes then remove from heat.
